Sipstruck - Colombia - Finca Las Palmas Geisha Coffee Beans

Sipstruck's Finca Las Palmas is a floral masterpiece from Wilson Ramon Jóven's farm in Huila, Colombia that showcases Geisha through meticulous double fermentation and double washing. The carefully selected cherries undergo float testing for density and consistency before 24 hours of anaerobic fermentation in nylon sacks to encourage sugar development. After depulping, the parchment ferments for another 24 hours in open cement tanks, gets washed twice with fresh water, and then spends 15 days drying on raised beds with rotation three to four times daily. The result is a silky, weightless cup that blooms with orange blossom, lavender, jasmine, and soft milk chocolate notes.
