Sipstruck's Finca Cruz Loma showcases Sidra at its most expressive, delivering caramel, golden apple, and electric brightness in a vibrant, luminous cup. Grown at 1,450 meters in Ecuador's Pichincha province by Galo and Maria Alexandra Morales, this family-run farm earned third place in the 2022 Cup of Excellence. The coffee undergoes standard washed processing with careful hand-picking and selective sorting for ripeness, followed by 48 hours of open-tank fermentation and 18 to 25 days of solar drying on raised screen beds. The result is a Sidra separation with silky sweetness, crisp acidity, and elegantly layered complexity that demonstrates why this varietal has captured the attention of specialty coffee enthusiasts worldwide.
